{My Diet Journey} Cinnamon Pancakes with Apple Sauce
April 28, 2011Based on what I made for breakfast yesterday, the Winnie the Pooh Pancakes with Strawberry Sauce, it occurs to me that introducing some sugar intake in my South Beach Diet Phase 2 works fine for me and has not provoked any cravings that I used to have with sweet stuffs. So with the leftover pancake mixture I have from yesterday, I decided to finish it up and serve it with a different kind of sauce. Then I thought maybe I should use apples this time because I have stopped eating apples ever since this diet started. And most importantly, I think it would go really well with the cinnamon flavoured pancakes. Also, this time, I am going to serve it hot.
Cinnamon Pancakes with Apple Sauce
Ingredients for Apple Sauce:
1 Medium apple, peeled and cut into 1 inch chunks
4 tbsp of water
1/4 tsp of sweetener
1/4 tsp of cinnamon
Instructions:
1. Put apples into saucepan with water and set on medium low heat. Cover and bring to boil.
2. After 5-10 minutes or so, remove cover. Apples should be tender. Mash them with the masher.
3. Combine cinnamon and sweetener and stir constantly. Add water if needed
4. Serve warm or chilled
Note: I like to make my sauces the night before, so I can put it in the refrigerator and have a chilled one or a hot one depending on my mood the next morning. However, for this apple sauce, I think it is better to serve hot, so I microwaved it for 1 minute before I serve with the pancakes.

I love the combination of apple and cinnamon! It really brings out the apple flavour. I added a few apple slices onto the pancake afterward, because I still like my apple to be crispy and not tender like the sauce. It's definitely a different sensation from the chilled strawberry sauce I made yesterday, even though they are the same pancakes!

Also, one thing I forgot to mention is that I only used one apple for the apple sauce because I'm only allowed one serving of fruit for my first week of phase 2 south beach diet. And one apple equals one serving. I only use maybe half portion of the apple sauce that I made, leaving me to be able to include few extra chunks of half of another apple to serve with the sauce.
