{My Diet Journey} Vegetable Quiche

I have been eating eggs everyday now, even though I love eggs but they can get kind of boring after awhile, especially I can't have any bread to go with them. So this time, I experimented in baking a Vegetable Quiche, hoping by changing the cooking method, it will spice up my repetitive diet routine. It turned out really good actually. It's a little bit like steamed egg with veggies. I had trouble figuring out how long I should bake this for as I used my small oven and the recipe I followed makes serving for 6. Anyway, here is how it turned out. Not bad for first time, right?
Vegetable Quiche
Ingredients:
A handful of spinach
Cheddar Cheese, 1 slice, shredded
2 large eggs
1/4 of tomato, chopped
1/4 of onions, chopped
(Amounts are estimated depending on how many servings. I made those up as I only made one enough for myself to eat. But key is I like to balance all condiments and have a little bit more spinach)
{ Have approximately the same portion of everything but slightly more spinach }
Instructions:
1. Microwave the spinach for 1 minute. Drain the excess liquid if any.
2. Combine eggs, cheese, onions, spinach in a bowl and mix well.
4. Pour mixture into oven-proof tray. I used the ceramic pie plate or you can pour in muffin pan to make small little quiche cups.
5. Bake for 30 minutes at 400 degrees or until your knife comes out clean when inserted in the center.
Note: if it starts squirting out juices, it's probably over baked.
{ Lunch: Spinach Salad with Tuna and Salmon Sashimi }
{ Dinner: Pan Fried Fillet with Tomato Paste }
For dinner, I kept it quite small and simple because I had to go play badminton straight after, didn't want to be too full. So I just pan fried the fillet and made my own tomato paste. Also took a cup of V-8 to get some vegetable intake. I enjoyed my meals so far :)
